TOMATO & GARLIC MILLET NOODLES PASTA

My kids love tomato and garlic spaghetti, but all the traditional spaghetti noodles are wheat-based! That’s why these millet noodles are so convenient. Made with 80% millet flour and only 20% wheat flour, they allow kids to enjoy their favorite pasta while getting the maximum nutrition from gluten-free grains. So next time your kids ask for spaghetti, try this recipe with millet noodles—they won’t be able to resist! Heres the quick recipe Tomato & Garlic Millet Noodles with A2 Paneer
Ingredients:

• 1 tbsp A2 butter
• 2 types of millet noodles (I used finger millet noodles and little millet noodles)
• 1 onion, finely chopped
• 4 organic tomatoes (from a local farm)
• 1/2 green capsicum (optional)
• 1 tbsp chili flakes (home-ground from whole organic red chilies)
• 1 tbsp Italian seasoning (mushroom-based, available at Rootz Organics)
Organic jaggery for the sweet touch
• Salt, to taste
A2 paneer, for protein (sauteed)

Method:

1. Prepare the noodles:
• Boil the millet noodles in hot water and set them aside.
2. Make the tomato puree:
• Blend the organic tomatoes and green capsicum (optional). You can remove the seeds from the capsicum if you prefer, but it’s optional.
3. Sauté the base:
• In a pan, melt the A2 butter.
• Add the finely chopped onions and garlic, sautéing until soft and golden.
• Stir in the chili flakes and Italian seasoning, mixing well. Italian seasoning is available @rootz_organics
4. Cook the sauce:
• Add the prepared tomato puree to the pan. Add organic jaggery.
• Bring it to a boil, then reduce the heat and let it simmer for a few minutes.
5. Combine noodles and sauce:
• Add the boiled millet noodles into the sauce, mixing everything thoroughly.
• Add salt to taste.
6. Add protein:
• Top the dish with sautéed A2 paneer for an extra protein boost.
7. Serve:
